I shared the following recipe with our Chapman community in advance of the Labor Day weekend. It’s real easy…. and the outcome is delicious. • Fry cubed eggplant (skin can stay on) in olive oil under low medium flame. • Add a whole chopped onion, mushrooms, a whole chopped green pepper, a whole chopped tomato and capers to taste. • Add salt, pepper and red pepper flakes. • When eggplant is brown and charred in spots, remove from heat. • Add chopped basil or mint. Place in a container and use on everything. This Eggplant Caponata is the Italian version of ketchup. I particularly recommend putting it on scrambled eggs, hotdogs and especially Italian sausage sandwiches. Mangia!

I saw Connie Benson '93 at the O.C. New Student-Parent Mixer in Shady Canyon. Connie who serves as Executive Director of Miss City of Orange told the crowd that nine of the last ten who were crowned Miss City of Orange were Chapman students; one of whom became Miss California and was a finalist for the Miss America award. Quite a coup! I suggested that Connie branches out and establishes a Mr. City of Orange/America contest, so that I could enter the competition. It's been on my bucket list Sorry, no photo of Connie, but she looked great! JLD

Post Graduate School Psychology students from Chapman University spent a week running workshops with our teachers. Together with our teachers they taught the children about the importance of staying in school and how to avoid drugs, alcohol and gambling. 5 students worked in the day centre and assessed the needs of each child. Micheal, group leader spent time with social workers looking at school dropout prevention while professor Dawn helped Bridget with the special needs curriculum. We had a great time and appreciate you sharing your experience, Thank you! -Grace House Newsletter

Congratulations to the #ChapmanU Percussion Ensemble for their 3rd place win at this year's Percussive Arts Society - California Chapter Competitive Festival. Led by Nick Terry, Director of Percussion Studies, our students competed against other college and university ensembles from across California. Percussion major Storm Marquis also won 5th place in the College Solo Keyboard Division. Following ensemble and individual wins in 2014 and 2013, The Hall-Musco Conservatory of Music continues to demonstrate excellence in the percussive arts! Bravo on a job well done!
